Agave de Cortesis produced using traditional, artisanal methods. TheAgavesare cooked underground using volcanic rock andAgavefibres and then crushed using a horse drawn stone known as a Tahona; naturally fermented in 250 litre pine wood vats and then double distilled in copper stills.
