Producer Information

Fabien Caz is a tenth generation vigneron who succeeded his parents in 2013 to look after their two-hectare Domaine that spreads across the towns of Chatillons and Vandires in the Valle de la Marne. The fruit is grown with organic principles and picked only when full maturity has been reached. Grapes are pressed slowly and moved to barrels utilising gravity. The cave which is attached to an old abandoned house still has writing on the walls from when the family and soldiers would hide from the Nazis. The cave also has a family of bats taking residence, their job is to consume the fruit flies allowing the wine to mature safely. No fining or filtration takes place. Dosage is determined through blind tastings just prior to disgorgement. The wines are vinous and of extreme interest.
