While mostkarwinskiireach maturity somewhere between 12 and 18 years, theCirial agave employed here range from 18 to 22 years old. The agave is cooked in conical earthen ovens, milled using a stone tahona, and fermented in wooden vats calledtinas. Distilled twice using copper pot stills. A contemplative journey from bold fruit to dry heat, with a deep earthy finish. 47% ABV. Dense with mature sugar and fiber and a complexity that speaks to its age, this mezcal offers fascinating structure.
