It’s rare that wine finished bourbon actually brings something to the table. The complexity of Daviess County’s underlying combination of wheat and rye mashbills gives enough of a canvas for the gentle finishing in Cabernet casks to really paint a beautiful picture of soft oak tannin and dark red fruit on top of the bourbon without overwhelming it. This whiskey is aged for 4 years and finished for 6 months in cabernet barrels with a cask strength of 96% proof. The nose is a warm dip into plum wine, rich cream, and delicately roasted spice. On the tongue, the notes of toasted rosemary over layers of tannin soak the mouth.
