Born into a family of winemakers, Philippe Pacalet is an expert in organic crops and natural winemaking. Currently, he works in eight hectares of vineyards located in different Burgundian crus: Beaune, Gevrey-Chambertn, Chambolle Musigny, Nuits St. Georges … in each of which respects the expression of the most authentic terroir. Unrelated to technological methods and in favor of a non-interventionist philosophy, Pacalet approaches the most ancestral systems, although from a scientific and contemporary perspective
